Salad:
- 2 cups of lettuce and spinach combined
- 3 boiled eggs, with only one yolk
- 1 cup sliced tomatoes
- ½ cup sliced cucumber
- ½ sma

- Quinoa (limit to your ideal ratio)
Dressing:
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- Red pepper flakes to taste.
Combine all the salad ingredients in a large bowl. Shake together the dressing ingredients and pour over the salad.
