Ingredients:
- 1 1lb pork tenderloin, sliced in 1/2 inch medallions
- sea salt, pepper, garlic powder, cayenne
- 1 Tbsp Extra Virgin Olive Oil
- 1
Tbsp coconut oil
- 1 medium head of cabbage, thinly shredded
- 1 medium onion , thinly sliced
- 2 minced garlic cloves
- sea salt, pepper, cayenne to taste
Directions
- In a nonstick pan, heat the two oils.
- Season medallions with seasonings. Brown the medallions until nicely brown and transfer to a plate, cover with foil and keep warm.
- After removing the medallions, add the shredded cabbage, onions and garlic.
- Over medium high heat lightly stir fry the cabbage and onions until a light golden brown.
- Season the cabbage mixture with sea salt, pepper, cayenne (if desired) to taste.
- When cabbage is done to your liking, return the medallions to the pan and stir into cabbage.
- Place lid on skillet. turn heat off and let warm through.
