“Summertime Chili…”

Ingredients

  • 1 – 15 ounce can kidney beans
  • 1/2 cup chopped red onion
  • 1/2 cup chopped red, green, orange, or yellow sweet pepper
  • 1/2 cup cho

    pped tomato

  • 1 to 2 tablespoon lime juice
  • 1 tablespoon fresh cilantro
  • 1 tablespoon fresh chives
  • Salt, pepper to taste
  • 1 teaspoon cumin powder
  • 2 teaspoons juice from jar of minced garlic
  • Hot sauce, to taste (optional!)

Directions

  1. Rinse and drain beans and pour into bowl.
  2. Add all other ingredients and stir.
  3. Enjoy!

I enjoyed mine as a side-dish served over fresh spinach with a grilled portabella ‘shroom. Source of recipe: I was experimenting in the kitchen, looking to add some protein to my meal.
