Ingredients
- 1 – 15 ounce can kidney beans
- 1/2 cup chopped red onion
- 1/2 cup chopped red, green, orange, or yellow sweet pepper
- 1/2 cup cho
pped tomato
- 1 to 2 tablespoon lime juice
- 1 tablespoon fresh cilantro
- 1 tablespoon fresh chives
- Salt, pepper to taste
- 1 teaspoon cumin powder
- 2 teaspoons juice from jar of minced garlic
- Hot sauce, to taste (optional!)
Directions
- Rinse and drain beans and pour into bowl.
- Add all other ingredients and stir.
- Enjoy!
I enjoyed mine as a side-dish served over fresh spinach with a grilled portabella ‘shroom. Source of recipe: I was experimenting in the kitchen, looking to add some protein to my meal.
